The best thing about coming home from a vacation is a home cooked meal. Even if I am the one cooking it. These baked chicken fingers are good. They’re easy, healthy and quick and one of the few dishes that everyone in my house happily eats. The only thing lacking is the extra calories and fat.

I use antibiotic/hormone free chicken breast. Trim fat if needed and cut into “fingers” Spray a glass pan with olive oil or cooking spray and preheat oven to 350 degrees. Mix 2 parts panko bread crumbs with 1 part grated parmesan cheese and add Italian seasoning and pepper to taste. Lightly brush the chicken pieces with olive oil and coat with the bread crumb mixture. Arrange in the pan and cover with aluminum foil then bake for 30 mins. Remove the foil and bake for another 5 minutes to brown the tops.
