If you love a good Caesar salad but your waistline doesn’t, try my version! Cut more than half the fat and calories using Greek Yogurt as the base for the dressing. Sound gross? Don’t knock it til you try it! Some of my pickiest clients have made this salad a staple in their diets!
1-2 cups chopped kale
4oz diced chicken
1 cup cherry tomatoes
2 tablespoons shredded parmesan
For dressing mix 1/8 cup plain 0% fat Greek yogurt with 1 tablespoon olive oil, onion powder, garlic powder and salt free seasoning blend. Top with shredded Parmesan and ground pepper.
