Packed with vitamins, minerals and fiber, sweet potatoes make a healthy, satisfying snack or side dish. This simple preparation is one of my favorites and super easy to prepare.

Wash and dry the potato well. Pierce the skin 5-6 times with a fork. You can either bake in the oven at 400 degrees for 45-60 minutes or microwave 5-7 minutes (rotating it halfway). Potato is done when fork tender. Slice down the center with a knife and gently squeeze ends to open. Mix in a teaspoon of coconut oil and sprinkle with as much ground cinnamon as you like!
